Think it's x-perl. At least the screen flashing. It's generally a dog addon.

This is pretty much the best addon if you want custom unit frames.

Idk I'm satisfied with the default UI mostly, but I like to see number AND percent, and I just like the Ui to be a little bigger, so I go with xperl, I imagine pitbull would give me the same results.

It would. Difference being that you could get quite a lot of other results with pitbull. There are minor addons that adds both numerical and percentage values to the default ui. Then there's moveanything! that makes you able to move and rescale various parts of the default ui. And obviously, ui scale.

All in all it's just a matter of getting used to the ui. I've played around with heavily modified ui's before, and when you've played with them for some time, going back to the default one can be weird. But usually it just takes a day or so, then it feels natural again.

There's no accounting for taste, but that works both ways. You might be happy with your ui and its various modifications, but other people might not. So when you release a video with a modified ui, there's a good chance that some of your viewers might find it annoying. In the case of this video, I didn't watch the whole thing because I found it extremely annoying with the screen flashing and the messy unit frames. It was just a constant distraction.
