how do i level up professions on this server? is it all manual, or is there a quick server way?

it's manual. Almost as tedious as leveling proffs in TBC retail.

You need to be Exalted with SSO before you can level them, but after that it's easy because of the increased rates, and there's a mat vendor right next to the proff vendors.

You should have probably noted that Shattered Sun rep only allows the use of Alchemy and Engineering. If you want any other profession, get Aldor/Scryer rep.
