I don't think I would want to add a PvP or maybe even class discussion board simply because we'll see topics like "who is the best ____ on the server" which lead to massive debates which we've annoyingly seen the past.

That is true, they do get very aggressive about topics like these. Class discussion I believe is important though, as it lets people ask questions to their respective classes and I personally could write some basic guides etc. The point of Class discussion is, that you share your knowledge of your class with others so that they may learn and thrive. I suggest making strict forum rules that do not allow you to write the "who is the best_____" - topics.
Up to you, I would prefer it. Maybe we should make a poll where we discuss that topic with all the up- and downsides.

I think in that instance I would just do like they do on retail and have "class roles" for "Damage Dealing", "Healing", "Tanking"

Even though it would relate a lot to PvE. I wouldn't mind a general class discussion though.

Truth is, it does relate to a PvE a lot. If you Impliment that, maybe open a Forum called PvP Strategies. I dont know, but "who is the best____" is not a strategy. :)
